A new sanitizing lo- temp dishwasher is being used: maintenace was able to increase hot water supply to machine so it meet's the manufactor requirement of 120 deg in final rinse. A second HACCP inspection will be scheduled at a later date.

Internal temperauree of milk cooler was still at 48 degs a few minutes after removing hot pan of fish, you must monitor temperature and have cooler serviced if milk can not be kept at a temperature = 45 degs or lower. This was your 2nd required inspection for the year.

Advised cook to split hotel pan of cooked pork to allow more rapid cooling, at 830am pork was temped = 139 degs; at 11 am was = 72 degs in refrigerator.
