Comments: During the inspection, two large tubs of cooked angel hair pasta were found cooling in the walk-in cooler. Per interview with the bartender they plan on serving the noodles for dinner that night. While the cooling process appeared to be acceptable, the cook was not present during the inspection. Therefore, the process for temperature control during service was not established. To avoid the amount of time the noodles are in the danger zone (45-140F), it is recommended that you allow the noodles to continue to cool in the tubs during service time and reheat the noodles individually for each order. You may also, reheat large batches of noodles to 165 degree F and then maintain above 140 degrees F during hot holding (steam table). In the future it is recommended that you cook noodles closer to service time and then move directly to hot holding (above 140 degrees F). This will eliminate the amount of time the food is in the danger zone.
