Comments: Gloves in use upon arrival. Steam table temperatures all above 140 degrees F. No potentially hazardous foods are out of temperature. Female employee in charge does not speak much English. She had an interpeter ask and answer questions about food safety. Charles Taveras came at end of inspection. He stated he is ill and doesn’t want to work with food or in FSE until he recovers from what appears to be a very bad cold. His voice is hoarse.

Comments: Spoke to owner about cooling foods properly and storing cooling foods in shallow pans uncovered during the cooling process. I also explained cooling temperatures as well as hot holding temperatures. Staff and Owner were clueless on temperatures. Owner stated he wants to do things correctly and is looking forward to taking Food safety class October 2018. Owner plans to also by new thermometers. The metal stem on hand was only for hot holding and it was broken and also in 5 degree increments for Degrees F.
